Celebrate Pancake Day With Great Recipes

Super Pancake Recipes To Try:

1. Classic crepes. Basic pancakes are known as crepes, and are delicious with lemon and sugar or with a savoury filling or sauce. Favourites include ham, cheese and sweetcorn sauce, or chocolate spread! You’ll need a cup of flour, two cups of milk (or part milk, part water, for a less calorific version), one egg and a pinch of salt. Whisk the mixture together and melt a tablespoon of butter in your frying pan, then pour in a small amount of the mixture and tilt your pan to spread it thinly around. You’ll want to keep your pan over a medium heat and flip your pancake after about a minute – the second side always cooks more quickly! Don’t forget that the first pancake always turns out badly, but as the pan heats up, they’ll get better and better.

2. Banana pancakes. If you’re looking for a healthier alternative to classic crepes, banana pancakes are the ideal choice, and they’re perfect for breakfast time. For two people, you can use two eggs and three bananas, mashing these together to create a batter. Add a pinch of salt, and blueberries if you wish, and cook these in your frying pan over a medium heat. You’ll want to create small pancakes that are much thicker than crepes, and because they are so healthy, you don’t need to feel guilty for drizzling them in maple syrup to enjoy!

3. Cloud pancakes. For a pancake that’s lighter than crepes and more indulgent than banana pancakes, try your hand at cloud pancakes. Mix together a quarter cup of flour (plain or gluten free if you wish), a few drops of vanilla extract, two teaspoons of honey, a pinch of salt and one large egg, and whisk in a quarter cup of warm milk. In a separate bowl, whisk an egg white until it forms peaks, then fold this into your batter mixture. Cook in melted butter in a hot frying pan, and sprinkle fruit on top when the edges begin to set. Transfer to the oven for 6-7 minutes until the pancakes puff up and turn golden, then drizzle with honey or maple syrup to serve.
